Harvest the nuts in late summer or early fall. Collect them a little underripe, before the squirrels and birds get them, and let them ripen in storage. The nuts are ripe when they’re brown and the sheath starts to dry. Handle bristly American hazelnuts with gloves, or they may irritate your hands.

Both species have thin-shelled nuts inside the husks. They taste even better than the closely related European filbert. You use them as you would any nuts, raw or cooked. Grind them in the food processor or blender. They make especially good meal that you can use with flour in pie crusts, pastries, and biscuits.
